That regional character still shows in dishes such as pasta in Bologna, olive-based cooking in Tuscany, seafood along the Amalfi Coast, and classics like carbonara and cacio e pepe in Rome. Sicily's cooking reflects Greek and Arabic influence. The restaurant describes Italian food as built on fresh ingredients and simple recipes, naming fresh Italian tomatoes, the wide range of cheeses used in dishes from salads to lasagne, and capers among the essential components.
