Founder Leslie Mackie established the bakery with a philosophy rooted in community and artisan craftsmanship, drawing inspiration from traditional old-world village bakeries and European master bakers. The original Belltown bakery opened on August 27, 1993, with a small team and a focus on rustic European breads made from regional, organic, and natural ingredients. The name Macrina references a fourth-century Greek mystic who led a community emphasizing simple, self-sufficient life and shared property, mirroring the bakery’s goal of bringing people together through the joy of baking.
