Mat took a hiatus from restaurant life to run his family’s business and raise his three children, but his passion for cooking brings him back to his roots to teach at The Cooking Lab. Michelle Capobianco is a former corporate lawyer turned private chef and cooking instructor who specializes in regional Italian cuisine. She has trained in kitchens throughout Italy and has led culinary tours in the Abruzzo region since 2017. Michelle is the mother of three growing boys and shares her love of good food and wholesome cooking.

The school provides a variety of adult classes, including workshops on knife skills, ravioli, gnocchi, and homemade pasta, as well as themed sessions like Taste of Thailand, Vegetarian Indian Cooking, and Dinner for Two events featuring Paella Valenciana, French Bistro Cooking, and dishes from Puglia and Rome. For younger students, the school offers after-school series for grades 3 through 5 and grades 5 and up, held on Tuesdays, Wednesdays, and Thursdays. These weekly sessions run from 4 to 5:30 PM and cover main courses, desserts, and wholesome snacks. The school also hosts camps for kids, designed to build independence and confidence in the kitchen.
