Their weekly rhythm involves firing the oven and doing prep work on Wednesdays and Thursdays. Carl directs Carmen and Ryan in the mixing and shaping of the loaves. Baking and deliveries begin early on Thursdays and Fridays. During the Farmer’s Market season, they operate under a green tent with their green 1951 Chevy Truck parked across the street. Sundays are a day of rest. As the master baker, Carl is mostly self-taught, learning from experience, books, bakery visits, and experimentation.
