Paul taught high school and coached swimming and water polo, later moving into a marketing and sales career and eventually owning a small business, while Chrissy worked as an elementary school teacher and now serves as a math curriculum coordinator. Paul's family has been in the Lockport area for generations; his great-grandparents emigrated to the Lockport and Joliet area around 1900, and he was raised there, attending Lockport High School and returning to coach and teach after college. The couple spent years using vacations to visit breweries around the country, favoring micro-brews with a relaxing vibe and plenty of choices, and after the birth of their son, Theo, they decided to open a brewery of their own. They live in Lockport with their sons, Theo and Grant, and their black lab rescue, Knox. The name comes from the family's last name, Ivnik: split in half and reversed, it becomes Nik & Ivy.

The brewery hosts special events, accommodating both small and large parties with a capacity of 80 people. A section can be reserved for smaller groups, or the entire facility rented for larger ones, with pricing based on the day of week and duration. Nik & Ivy also hosts fundraising events for schools, PTOs, clubs, sports organizations, non-profits and other community groups, and Paul has been involved with the Lockport High School Foundation.
